Tracy and Kristi Carter always had an affinity for BBQ – traveling far and wide to try new BBQ joints. They found a love for the delicious Carolina pork style BBQ and the Central Texas style BBQ. This is when they thought “what if we mixed the two?” That question led to the production of their award-winning gourmet sauces and seasoning in 2005. From their Mild Salsa to the Bayou Gold Mustard Sauce, there was something for everyone and every meal.

In 2017, they were ready for a new adventure. Tracy and Kristi headed to Texas full of excitement and nerves to buy a food truck. They decided to pull over for some Texas BBQ to make sure this was the right decision. That is when they saw a sign in the restaurant that said “For I know the plans I have for you, says the Lord. They are plans for good and not for disaster, to give you a future and a hope.” That sealed the deal for the Carters, and they headed on to buy the food truck that would later be known as JAC’s Tailgaters.

JAC’s Tailgaters became an instant favorite among the local crowds. With meats like brisket, pulled pork, chicken, and pork belly they had options for everyone in the family. However, their BBQ nachos are what stole the show! JAC’s Tailgaters was at every local event selling their delicious meals and supporting the community that supported them.

In July of 2020, Tracy felt a tug at his heart to open JAC’S Tailgaters fulltime. Little did he know, 3 months later he would open his own restaurant - JAC’s Craft Smokehouse.

JAC’s menu items range from delicious handheld sandwiches to large meat plates to even fried brussels sprouts, but don’t worry they still have their famous nachos on the menu! And make sure to swing by for your morning coffee and a pastry – they really have it all.

When you walk into JAC’S, you’ll feel right at home. Tracy and Kristi Carter’s mission is to not only feed your body but also your soul.
